Weeknight Peppery Chicken Piccata. Yummy, satisfying and definitely comforting!!!
Ingredients
- 4 x chicken breasts
- 1 1/2 tbsp small capers
- 40 gm unsalted butter
- 2 tbsp cracked black pepper - medium grind in FinaPod PRO Plus
- 2 tbsp lemon juice
- 1 cup chicken broth
- 1 tsp sea salt - fine grind in FinaPod PRO Plus
- 1/2 cup dry white wine
- Fresh Thyme sprigs
- 1 tbsp plain flour for dusting chicken breasts
Instructions
- Tenderise chicken breasts, and coat lightly with the plain flour and season with the salt and pepper from the FinaMill.
- In a skillet, on medium high heat add in olive oil and brown the chicken on both sides, about 2-3 minutes each side depending on the thickness. Set aside.
- Deglaze the pan with the white wine, lemon juice and add in the thyme.
- Add back in the chicken and cook for a further 2-3 minutes till almost cooked then drop in the butter and capers and generously grind black pepper from the FinaMill. Season to taste and serve over pasta or crusty bread! YUMMO
