Gregson's Peppery Chicken Piccata

Weeknight Peppery Chicken Piccata. Yummy, satisfying and definitely comforting!!!

  1. Tenderise chicken breasts, and coat lightly with the plain flour and season with the salt and pepper from the FinaMill.
  2. In a skillet, on medium high heat add in olive oil and brown the chicken on both sides, about 2-3 minutes each side depending on the thickness. Set aside.
  3. Deglaze the pan with the white wine, lemon juice and add in the thyme.
  4. Add back in the chicken and cook for a further 2-3 minutes till almost cooked then drop in the butter and capers and generously grind black pepper from the FinaMill. Season to taste and serve over pasta or crusty bread! YUMMO
